ARCHIVED - Health Canada's Acrylamide Monitoring Program

To assess the effectiveness of acrylamide reduction strategies, Health Canada will implement an acrylamide monitoring program, beginning in 2009.  This program will target those classes of food products frequently consumed by Canadians, those considered important from a nutritional standpoint and those suspected of containing higher concentrations of acrylamide.

The food commodities to be targeted by Health Canada's monitoring program include potato chips, french fries, cereals, bread, coffee, cocoa products, roasted nuts, grains and seed, as well as baby and infant foods.

Results from Health Canada's monitoring program will be published on this webpage as they become available.  These results will also be used to further develop a more extensive Canadian occurrence database for acrylamide in food, to be used in the context of a food-related health risk assessment.
